When I first met my husband, I had little to no interest in kimchi. I knew nothing about it and didn’t take the time to get to know it. When eating out, it would come as a side dish, but I would never touch it. I found it intimidating, and in my opinion, it wasn’t exactly appealing to the eye. One day, however, at a Korean barbecue, I tried kimchi with pork belly. Wow, did my whole mindset change!
